Paneer Tikka Masala – Our Chef Guides you step by step …
1. Paneer (Cottage Cheese)-400 grams
2. Bell Pepper ( cut in large cubes)- 100 to 150 grams
3. Onion Puree – 1 Onion
4. Tomato Puree- 3 to 4 Tbsp
5. Turmeric Power – 1/2
6. Paprika – 1 tsp
7. Tandoori Masala – 1 1/2 tsp
8. Red Chilli Powder – 1 tsp
9. Black Pepper – a pinch
10.Cumin Powder- 1/2 tsp
11. Garam Masala Powder – a pinch
12. Thick Cooking Cream- 1 tbsp
13. Lemon Juice – 1 Tsp
14. Fenugreek dry- 1 Tsp
15. Sugar- 1 tsp
16. Oil – 2 tbsp
17. Coriander leaves
18.Green Chilies -1
19.Salt- 1 tsp
20. Cumin seeds( optional)
21. Water ( as required)
1st step ( Making Paneer Tikka)
Add all dry ingredients (tandoori masala powder, garam masala powder , salt 1/2 tsp, cumin powder, Paprika , red chilli powder, Black pepper powder, Turmeric powder )with cooking cream 1/2 tbsp and lemon in a bowl. Mix all well. This will make a paste of spices.
Now, coat the spices paste on the bell pepper and the paneer (cottage cheese)pieces. The left over spices mix paste can be used in our gravy.
Then put these pieces in the skewers one after other and put them on direct fire . This will give a smoky smell to the paneer.
2nd step( To Make The Gravy)
Heat the vessel and add 2 tbsp of oil. Then add cumin seeds which is optional. Let it pop and then add onion paste , fry until change its color. Now , add tomato puree and let it cook for a min or two.
After this add the left over spices paste and let it cook for sometime till gravy thickens. Now, add chopped green chilies and coriander leaves and mix well. then add remaining 1/2 tsp of salt and cooking cream.
mix all well.
Add to it now the prepared tikkas and bell pepper.Add water as per your desired gravy.Let it cook for a min or two . Now add sugar and dry fenugreek to it.
Let it cook till desired thickness of gravy. Turn off the heat. Serve in serving dish garnish it with some chopped coriander leaves. Serve it with Indian bread or Rice.
